Nutty Granola

Nothing beats a strong breakfast game. Although I like to alter mine every now and then, one of my all-time-favorites is my homemade granola. It's perfect for a smoothie bowl, a delicious snack in between and adds a crunchy touch to deserts. On top of that, it is incredibly easy to make.

Here's what you need:

  • Oatmeal

  • Chopped walnuts, hazelnuts, almonds, cashews or whichever nuts you like

  • Honey, or rice syrup

  • Coconut oil

  • Cinnamon

Directions

  1. Preheat the oven at 180°C

  2. Mix oatmeal and nuts in a large bowl and set aside

  3. Melt 1 cup of honey or rice syrup together with a 3/4 cup of coconut oil until liquid

  4. Add the liquid to the oatmeal mix and stir well until it's soaked (ad coconut oil if it’s too dry) and let it sit for two minutes

  5. Spread the mix on a baking sheet and add cinnamon 

  6. Bake in the oven for 10 minutes until nuts are slightly golden 

  7. Caution: depending on your oven, they shouldn't take longer than 15 minutes (check on them after 10' to be on the safe side!)

You can always adjust the ratio of the oatmeal and the nuts according to your preferences. I prefer a ratio of two parts oatmeal and one part nuts. If I feel fancy, I also throw in a couple of dates or desiccated coconut flakes. If you do that, just make sure to add them raw as a very last step after baking, otherwise the dates will become too hard and the coconut flakes will burn. Other than that, you are good to go to and add whatever you like! Feel free to make large quantities so you can store your granola in a cookie jar for up to a month.
